Whole-grain rye flour

Whole-grain rye flour contains all the important components of the grain. The bran is rich in cellulose and dietary fibers, the aleurone layer contains protein and vitamin B, the endosperm has very high mineral content while the germ is the part of the grain that is rich in vitamins. So products made from whole-grain flours have a much higher mineral content than their refined counterparts.
